1 1/2 cups crushed tortilla chips
1 lb ground beef
1 cup rice, cooked
1/2 cup salsa
extra peppers (optional)
1/4-1/2 cup corn
1 cup sour cream
1 cup cottage cheese or refried beans (depends what flavor your family likes, I've used both and they're both really good)
grated cheese
Preheat oven to 400. In greased casserole dish, place half of chips at bottom. In pan, cook beef and peppers; add salsa and corn, cook till heated through. Stir cooked rice into beef mixture and place in casserole dish. Mix sour cream and cottage cheese (or beans) together and add on top of beef. Add rest of chips on top and sprinkle with cheese. Bake for 20-25 minutes or until cheese is bubbly and brown.
